Avocado Tuna Salad Sandwich

Who doesn't love a quick, easy, and extremely tasty lunch?
Well, even if you don't I'm sure you're not going to be able to dislike this one. 

Not only is it ridiculously tasty, it's super healthy as well. I was rumbling around in the kitchen and wanted to make something filling, that I wouldn't have to spend hours standing over the stove making. I'm not a massive fan of canned tuna, so thankfully we buy the Albacore tuna in a jar with olive oil from Waitrose. You can store it in the cupboard until you open it and then once opened you just put it in the fridge and use it within a week or so. Personally, I prefer it to the canned stuff, but whatever takes your fancy.


Ingredients wise this is all you need:
half a jar of albacore tuna
half a lemon
2 mini chilis
quarter of a cucumber
1 tomato
half an avocado
a few slices of sourdough bread
salt, pepper, cilantro


It's a ridiculously simple process.

Mash up the avocado in a bowl until you are left with a couple of chunky bits (they're the greatest after all) and squeeze in your lemon juice. Chop up your mini chilis, cucumber and tomato into tiny pieces and add them to the bowl. Stir in all in together and then half of your jar of tuna. For the final time, mash it all together and add the avocado tuna medley onto your slices of sourdough. Sprinkle a little bit of salt, pepper, and cilantro on the top you have yourself a masterpiece.

    1. I sometimes make it with mayo, but with today's recipe and the oil from the can of tuna, you really didn't need anything else.

    One of my son's all time favorite foods is tuna salad. I don't think he's ever tried it with avocado. Definitely going to show this to him, so he can try something new. Sounds delicious!
